Hey, listen up, nimrod. The joke here is that the person wants their mom to be in the Paralympics, which is for athletes with disabilities. The mom responds by saying the person needs to eat more vegetables. Basically the mom thinks the person is too unhealthy, so the only sport they would qualify for is the Paralympics!
